 Maple Town at Mountsberge            March 13, 2024

Trees are tapped while the temperatures are still freezing and once it thaws the

sap starts to flow. Our adventure took us inside Mountsberg Conservation Area, 

in Campbelleville, among 150 – 200-year-old sugar maples,




Our first stop was to the Talons and Tail Feathers show where we learned all about some of the resident raptors and met a few up close.


At the Raptor Centre we had a wonderful opportunity to learn about the different species of birds of prey in Ontario, their characteristics and status in the wild.  Many of the birds arrive at the Centre due to accidents that render them incapable of flying, banned birds kept as pets illegally or wildlife shows giving them up.








Then it was time to sample the Pancakes at the Pancake Pavilion.




Down the lane is the Village called Maple Town where we learned about tree tapping, sap collection, and syrup making. 


We sampled the sap which contains approximately 2% sugar and compared it for sweetness to Maple Syrup which contains 66.5% sugar.  The flavor of Maple Syrup develops during the evaporation process which also initiates caramelization.  As well we also sampled Maple Sugar which is approximately 96% sugar.



Lastly, we visited the animal barns and horses then said goodbye to Maple Town.
